Show your love through … Blueberry Muffins

So we’re talking about how to show your love to others this February season.  It’s an easy thing to do … It just takes some intentionality and a bit of effort.  One of the ways I show that I love my children is to make them special things that they like.  My daughter loves these blueberry muffins.  I haven’t made them in a while and she’s been asking for them, so what a better way for me to show her that I love her and I’m listening to her than to make them for her.  They are super easy and very delicious.  I wanted to share the recipe with you today.  My variations, although few, are in parenthesis. Ranch Chicken

Ranch Chicken — A great, easy, tasty, go to recipe that I use often and you should too.  I have no idea where I got this recipe.  I’d love to give credit where credit is due, but I really have no idea where I got it from.

4 boneless, skinless chicken breasts
1/2 cup melted butter (I usually use 1/4 cup)
3/4 cup parmesan cheese, finely grated (you can also use Asiago, which is delicious. I choose Asiago most of the time)
3/4 cup cornflake crumbs (or wheat bran flakes or rice chex)
1 package Ranch dressing mix (original or buttermilk, either one is great)
1. Preheat oven to 350 degrees.
2. Mix dry ingredients together and place on a plate.
3. Dip chicken in butter and then dry ingredients. 
You can drizzle the rest of the butter over the chicken breasts if you’d like.  It’s yummy!
4. Place on parchment paper in a 9×13 glass baking dish.
Bake at 330 degree oven for 20-40 minutes or until juices of chicken run clear.  

If you keep 1 box of corn flakes, the cheese and a packet of ranch mix on hand, you’ve got yourself an easy dinner!

Homemade Cinnamon Rolls: A New Years Tradition

I’ve recently (within the past few years) started a new tradition for us … making homemade cinnamon rolls for our family on New Year’s Eve or Day.  We usually do a New Year’s Eve in; Enjoying each other, a fire and homemade fun.  With extra time on my hands a few New Year’s Eve’s ago, I knocked these out and haven’t looked back.  I use The Pioneer Woman’s Cinnamon Roll Recipe … and you should too!  It’s super easy … it just takes time to let the dough rise and sit and cook! My new favorite recipe: Chicken Pot Pie

This will be a short one, friends.  I just want to share my new favorite recipe, since I’ve just put it in the oven.  It’s a super easy one.  Actually, I think most of them are super easy, but for some reason I was never able to make one that tasted good.  I’m speaking of Chicken Pot Pie.  Have you ever made one?  Mine were always runny and just had no flavor.  I was spoiled by Marie Callender’s Pot Pie from the frozen foods section throughout college and my early marriage years!!! 🙂 More

31 Days: Let’s Just Be Honest Day 20: Apple Cider

Let’s just be honest: Autumn is my favorite season.  Yes, winter has christmas and spring is when I was born and summer is full of fun, beaches and sunshine, but there is something about Autumn.  The reprieve in heat, the cooling off, the changing of the leaves (that I get to look at in magazines because here in Austin things just go from green to brown!).  We got chilly this past week.  Low of 52 one night and high of 59 the next day.  It was great!!!  So we made apple cider.  It was super easy.  Have you ever done it this way? It’s Saturday!!!! YAY!!!  Let’s Just Be Honest: Sometimes I need to remind myself to just go have fun.  Funny isn’t it?  Well, I wanted to remind you to do that today.  Go with your friends or roommates or kids or family and do something fun.  Walk into Party City and try on their fun sunglasses and look at Halloween costumes.

So, let’s just be honest, I’m making the same dinner two nights in a row. Mostly because it was soooo delicious and secondly because my pickiest eater ate it all in about 7 minutes and asked for more.
