Thai Chicken Wraps

Pioneer Woman has some of the most amazing recipes, and this is one of them.  I made this for the family for lunch after church Sunday and we all gave it a thumbs up.  Don’t be afraid when you see the length of the recipe-it has shortcuts and it is not hard to prepare.

Here are the tweaks I made to her recipe: More

The Lord Is My Portion

I feel a little busy sometimes.  Sometimes things are in a good flow and rhythm and we’re rockin’ right along; but not always.  I don’t do as well when I feel like stuff is busy.  I have in my head what needs to get done (and sometimes feel like it’s never done) and it makes it hard for me to sit down and relax.  I feel like relaxing is only to be done when everything else is already done.  But that’s not true.  God can allow me to relax and feel at peace even when everything isn’t done.  He is my portion all the time; Here is some truth: More

Self-Centered Children

Oh, my gosh .. you have to go here and read this.  It is sooo good.  I don’t want to raise self-centered children.  Sometimes I feel like it’s inevitable.  So much in our culture points to ‘you’re the best’ … ‘you deserve it’ … ‘you’re #1!’ … ‘love yourself first’ … and on and on and on.  My husband wrote this post on his site about raising Self-centered children.  Go here and read it!

The Best Cupcake Ever

I’ve been talking a lot about food lately, haven’t I?  If you know me personally, you’d give a resounding ‘YES!’.  If you read this blog regularly, you’d do the same.  Thank you for enduring these food talks with me.  I’ve been talking about it a lot, because it’s been on my mind a lot.  The New Year came, after a few months of over indulgence, and the hubby and I decided to pull back on our eating.  My waist had been expanding.  It was a good thing, and still is.  Speaking of expanding … I’ve been craving these …

cupcakes 2

These are my favorite cupcakes EVER.  They come from a little shop up the road from me called Lick it, Bite it, or Both.  For the past few years I’ve requested these for my birthday treat.  I know I could get some amazing Austin Criticism here, but for me, they far surpass Hey, Cupcake and Cupprimo. They are simple.  You don’t have to over indulge a cupcake with a million ingredients and toppings for it to be the best cupcake ever.  LIBIOB does this amazingly.  They are FAAAARRRR more moist than any other cupcake I’ve had anywhere here in Austin.

I love food.  I love these cupcakes.  And I love that I get to eat them in less than 1 month on my birthday.  yay!

Where do you find your most favorite cupcakes ever?

Ah-Ha moment #3

I’ve been reading Made to Crave.  Have you heard of it? It’s a devotional that was recommended to me by a friend through my YouVersion Bible app.  (YouVersion is a great, free bible app.  Just download it, create a profile, search ‘food’ and start the Made to Crave reading plan.  This plan is adapted from the book written by Lysa TerKeurst wrote.) It’s a 21-day reading challenge and it is really great.

This devotional has given me my Ah-ha Moment #3 … (you can read about moments 1&2 here).

Zucchini & Squash Chips

Recently, I told you guys about how I was doing the Slow Carb Challenge.  It’s still really great.  I’m on week 5 of my 6 week challenge.  I’ve also recently spoke of how important snacks were to me and how I need to make time to prepare for my snacks.  It’s of vital importance to my health and weight.  Today, I wanted to share another snack with you guys! Santa Rita 120 Cab

Here you go, folks.  A reasonably priced Cabernet Sauvignon.

This is one of those small bottles of wine that World Market has for sale all over their store.  Be careful.  These things are dangerous!  You can pick up one or two or ten of these in no time!  My hubby got it in his Christmas stocking from my mom!  Fun, hu?!

Cabernet Sauvignon is a widely known red wine variety.  It is apparently grown in almost every wine-producing country of the world.  I’ve read about it here and there, mostly through Wine Spectator Magazine and Wine for Dummies.  I think these vines are pretty easy to grow, in that they are pretty hearty.

I’ve always felt Cab’s to be really full-bodied and sometimes, frankly, just too much.  I like them best with a really great steak.  But lately, thanks to this cute little bottle of Santa Rita 120 Cab, I’ve just enjoyed it  for no other reason than to enjoy it.  This wine was very smooth, yet rich and dense.  It didn’t have too much going on in the tastes, but enough to peak my interest in wanting more.  That seems to be just the right amount of ‘going on’ for me when I’m wanting to enjoy a relaxing glass of wine.

You should visit the Cab Wiki Page and check out the grapes.  Don’t they look just delicious?!

Do you drink wine?  What kinds of wine do you like?
