Pumpkin, everything!

I love fall 🙂 … all the fun foods and fall weather (although it was 90 degrees today here in Austin!)  But I’ve been getting all my October /November issue magazines and there are so many great pumpkin things to make.  Today I ran across a Pumpkin Cheesecake recipe that I want to try (although cheesecake scares me a bit because I’ve never made one!)  I wanted to share this recipe with you today … 

Homemade Pumpkin Spice Latte

makes 1-2 servings

Ingredients:

2 cups milk


2 tablespoons canned pumpkin OR 1 teaspoon of Torani Pumpkin Spice Syrup (your choice)


2 tablespoons sugar or sugar substitute – you can halve this amount


2 tablespoons vanilla extract


1/2 teaspoon pumpkin pie spice
1-2 shots espresso (about 1/4 cup of espresso or 1/2 cup of strong brewed coffee if you don’t have an espresso machine.)

Directions:
In a saucepan combine milk, pumpkin and sugar and cook on medium heat, stirring, until steaming. Remove from heat, stir in vanilla and spice, transfer to a blender and process for 15 seconds until foamy. If you don’t have a blender, don’t worry about it – just whisk the mixture really well with a wire whisk.

Pour into a large mug or two mugs. Add the espresso on top.

Optional: Top with whipped cream and sprinkle pumpkin pie spice, nutmeg, or cinnamon on top.

    Oh oh oh oh, as soon as I get some pumpkin, I will be making this. It sounds wonderful!

    Don’t be afraid of making cheesecake. It’s a piece of cake. Pun intended. 🙂 I have made pumpkin cheesecake a number of times in the past year and I had never made it before either. I was afraid but it’s a cinch. My favorite Pumpkin Cheesecake recipe is from The Joy Of Cooking by Irma Rombauer.

    Looks yummy, a bit thick, but yummy.

    I am in the pumpkin mood as well. We made, and polished off, a pumpkin pie already this week 😉
