I woke up on September 1st and the high that day was 101. But it was September 1st, by golly and I was going to put my Autumn wreath out!!! I did. It made me feel better.
By the 5th, the high was only 91! That was glorious. I was actually able to put my patio furniture to good use! It was sensational to sit out back of a morning and even quite nice to sit outside at 5pm that afternoon as the children played outside.
For now, we’re still in a great weather pattern … highs only in the mid 90′s for the next 4 days!!!
I love Autumn. I think it is my favorite time of year. We had 80 days over 100 degrees this summer (and what seems like every summer, now-a-days)! I get so excited for autumn, the change in color, the change in weather and eating pumpkin-everything! So with excitement, I share an amazingly easy and scrumptious Pumpkin Spice muffin recipe for you!
Pumpkin Spice Muffins
1/2 cup applesauce
1 can pumpkin
1 box spice cake mix
1 egg
Mix all together until blended. Place batter in muffin cups and bake at 350 degrees for 15-18 minutes

Yum! I miss Texas, a lot, but not the temperatures. It was 42 this morning when we got up (in Alaska). I have been warned that it will reach below freezing by the end of October! The leaves are turning and falling already.

A friend of mine just shared the vegan version of this recipe since the kids can’t do eggs. Just leave out applesauce and eggs and bake the same. Delicious!
